Las Vegas is packed with Vietnamese restaurants, but our favorite is Pho Vietnam, located in the Chinatown Plaza on Spring Mountain Rd. about two miles west of the Strip. Vietnamese cuisine can be a little different (unless you’re into intestines, tripe, blood porridge, and the like), but one dish that seems to pass everyone’s gut check is a soup called pho tai. This noodle soup, served with razor thin slices of raw beef, is fabulous here. Spice the soup with jalapenos, basil, bean sprouts, lime, and your choice of hot sauces to create a virtual explosion of taste. Don’t worry about the raw beef; it cooks thoroughly in the hot broth. But if you like it rare, ask for the beef on the side, then drop it in as you go. You can also get the soup with chicken, seafood, and other exotic additions (such as the tripe, et al.). Great stuff, and a bargain at $5.50-$6. Pho Vietnam is a bargain all the way around, with a full menu of selections (also try the spring rolls, which are lighter than Chinese egg rolls) all for $8 or less. But trust us, the great pho tai is the play.
