More convention spaces. More ballrooms. Another long hallway.<\/p>\n\n\n\n<p>Then you see it: a dry-aging room full of beef, right there behind the glass. It stops you for a second.<\/p>\n\n\n\n<p>Walk a few more steps and you\u2019ll see the entrance to Westgate&#8217;s Edge Steakhouse \u2013 its dark lounge quietly inviting you in.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Meet Mike<\/h2>\n\n\n\n<p>Step inside, and the first person you\u2019re likely to meet is behind the bar. Mike Thompson is the veteran barman who welcomes exhausted conventioneers into this hidden gem of a steakhouse. You just genuinely got to love what you do,\u201d barman Mike Thompson recently told the <a href=\"https:\/\/open.spotify.com\/episode\/0LABreG9OWH3tcPGdmNsrM\">Food And Loathing podcast<\/a>. \u201cI love coming behind the stick every day.\u201d<\/p>\n\n\n\n<p>Thompson has been doing this for more than 30 years, including a decade at Edge, and he represents a style of Las Vegas bartender that\u2019s becoming harder to find\u2014part host, part historian, part connective tissue between strangers and regulars who may only pass through once a year.<\/p>\n\n\n\n<p>\u201cYou\u2019re only a stranger once,\u201d Thompson is fond of saying.<\/p>\n\n\n\n<p>It sounds simple, but it explains a lot. At a convention hotel, where guests cycle in and out by the thousands, Thompson has built something more personal. Names, faces, stories\u2014they stick. And for a lot of visitors, that bar becomes the first place they can finally exhale.<\/p>\n\n\n\n<p>You could easily stay there. The bar and lounge are fully capable of carrying the experience, whether you\u2019re in for a quick drink, a few bites, or a full meal. But that\u2019s only part of what\u2019s happening here.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">A Steakhouse That Goes Beyond the Expected<\/h2>\n\n\n\n<p>In the dining room, Executive Chef Dante Garcia is working from a different kind of playbook\u2014one that respects the foundations of a classic steakhouse while quietly pushing beyond them.<\/p>\n\n\n\n<p>\u201cSome of my favorite things to do are take classics and put a twist on it\u2026 and still represent myself as a chef,\u201d he says.<\/p>\n\n\n\n<p>That approach shows up immediately. But at Edge, he\u2019s operating with something not always available in those environments: autonomy.<\/p>\n\n\n\n<p>\u201cHere\u2026 I have 100% creative freedom\u2026 these are my dishes, and I\u2019m in full control.\u201d<\/p>\n\n\n\n<p>It\u2019s a distinction that matters. It\u2019s not built around celebrity, spectacle, or scene. Instead, it reveals itself in layers.<\/p>\n\n\n\n<p>It\u2019s not what you expected on the walk to the hotel.
