This one’s pretty easy to summarize: If you want the best-quality sushi in town and don’t mind paying the price, this is your place. As described in the ELV excerpt, Yui was created and is overseen by the chef who made Kabuto Las Vegas’ sushi star and by most accounts, he’s raised the bar again.
There’s not much we can add to the ELV review, except that a third option called “Gen’s Selection” is now available for $160. We tried it side by side with the $120 omakase. Both are exceptional and come with the same number of courses, but Gen’s brings a few upgrades, e.g., an extra piece of fish or a higher grade here and there. The differences will be imperceptible to most, so unless you’re a bona fide sushi connoisseur, the omakase is good enough. Single orders of nigiri are $6-$15 per piece, so the 10-piece nigiri tasting for $68 provides better value than ordering à la carte, then maybe tack on a few of your faves at the end.
As John Curtas mentions in his review, the restaurant is a little hard to find. Traveling west on Spring Mtn. from the Strip, turn right on Arville and look for the American Shooters gun range on the right. Yui Edomae is on the north side of the building just before it. Don’t be put off by the outward appearance; it’s pristine inside.
