Had that, with panko of course, very airy and fluffy, at the Fairmont in Maui. Nice.
Interesting list.

My most recent discovery (that is on this list) was last month -- Sage's Foie Gras Brûlée with candied kumquats, cocoa nibs and shaved Torchon. Absolutely ridiculous. Of all the great food I experienced over three nights, this is the one dish that I texted to friends and family. Wow!


Thanks, Frank. Wowza, we had far too many of those when you think about it. Guess we really used to vegas with abandon!

Terry, in July we're getting together at one of the local vintner's with some other folks, a few restaurateurs, to celebrate the Demise of Foie Gras in California Dining Extravaganza.
Have to agree with #31 - the Bobbie at Capriotti's. An absolutely fantastic sandwich.
Yikes, only done 5 on the list! Need to get moving! Two more plan for next trip.

Had this a few years ago and used the LVA 50% off coupon. At the time the price was $49.
If I win Megabucks, I'll be eating #1 every time I'm in town.

Its a creative dish and it tastes good enough but I prefer lobster the traditional way - boiled and buttered.
Glad I tried the Binions dish but probably would not order it again.
