All you can eat Sushi?

My brother and I are coming into town at the end of the month and would like to get some sushi. We are real picky, but here in Chicagoland, I can go to several sushi restaurants that have all you can eat deals. You still order your sushi from a menu (might be a limited special menu - usually a sheet of paper you turn in). What we like about this idea over a buffet (Todai, etc) is that the sushi is obviously fresh and can be customized - ie I don't like avocado.

Does anyone know of any sushi restaurants that have all you can eat deals like this? We will have a car, so even a place away from the tourist areas is ok.

IF you don't know of any restaurant like that, but know of a good sushi buffet, I would like to know that as well. We have Todai here in Chicagoland, so I'm looking for more of a mom & pop type place that might have more reasonable prices than Todai.

We have NOT tried them though have stayed several times at GVR.
I just want to say that at least usually I have seen discount coupons available for Todai in the LV Freebie magazines (I think $5 off or something like that -- so that may be something -- although I understand that you don't necessarily find Todai's prices to be reasonable).

I've heard some good things about Makino, which has two locations in Vegas (one near downtown at the Premium Outlets). Dinner appears to be about $25. https://www.makinolasvegas.com

Might just check them both out since the GVR place looks interesting.

I'll be stopping in on my visit next week. I need to start using my $400 worth of Stations Gift Cards so why not?

Kai (SUSHI)—Located on the west side at 4246 S. Durango, Kai offers one of the better all-you-can-eat deals in town. It’s $24.95 for an extensive selection of nigiri and rolls. There’re also some happy-hour discounts that we need to look into, but we can endorse the $24.95 deal right now.
Lahaina Grill (SUSHI)—Or go up the road a little farther to Lahaina Grill at 4570 S. Hualapai. This place used to do 24-hour SUSHI, then cut back drastically, and is now serving late-night again (till 4 am). You almost can’t eat here without some kind of a deal in progress, but the strongest is the half-price happy hours that run from 3 to 7 pm and 10 pm to 4 am every day. We went at 10:30 and had three orders of SUSHI, two specialty rolls, and four Kirin draft beers ($2 during happy hour) and the bill came to $33.
