I also vote for Bouchon which is worth the visit just for the pastries.

I just stayed at Aria and a short 10 min walk through Crystals to Cosmo gets an amazing brunch at the Wicked Spoon. Truly wonderful.
We love Mary's Hash House.
If you're downtown try DuPars at the Golden Gate. Good for other meals too. Try the chicken pot pie.
Can't go wrong with the Peppermill.

Bon Ami Gabi, at Paris. Sit outside when the weather is nice.
Mary's Hash House has been good to us on trips. Picked it up from a tip from ken in a similar thread a few years back.
Th key to Red Velvet Cake (or pancakes in this case) is the cream cheese frosting. It compliments the chocolate flavor very nicely. I dont like choclate cake with chocolate chips and chocolate frosting....its too much chocolate. And yes - its possible to have too much chocolate.

Back to the topic - if you just want high quality breakfast baiscs serverd in good portion you dont need to drive far. I'm a big fan of the Bougainville Cafe at Terrible's Casino on Flamingo...Blueberry Hill is right next door....and Ellis Island is a block away. And if ou dont mind making the trip out to Boulder Highway I would say the Diner in the Eastside Cannery has some of the best steak and eggs deals around with good steaks (not the cheap crap you get in most places)

My new favorite breakfast place is M & M Soul Food Cafe. Yummy!!
