Best Steakhouse In Vegas?

We just ate at N9ne; we had been looking forward to it for a while, and weren't really put off by the reports of noise and overly casual service. The restaurant was a real disappointment, though. We liked the service just fine (yes, it was very young and very casual, but plenty attentive and knowledgeable), but the food was a major disappointment. Good but not top-drawer quality, and the chef is really mediocre. Most of what came out of the kitchen was unimaginative or cloying.

Looking foward to Craftsteak on the next trip, though.
Delmonico and Craftsteak were both excellent--both in terms of the food on the table and the overall experience at the restaurant. You can't go wrong either place. Hugo's is old-style good. N9NE and Binion's were good but not great. I'm taking my wife to CUT in a few weeks and I hope it measures up to the others. I can't let this thread pass without some props for Austin's, though. Yes, it's a little out of the way at Texas Station. Yes, it is a little out of place in that casino. Yes, the food and service are fantastic. Yes, compared to the big-rep strip steakhouses your tab will be much less than the others especially if you use the POV coupon.

Market at Aliente was excellent(not technically a steakhouse). I had an awesome veal chop there. With the POV, an excellent deal. Also had the station gift cards to pay the difference(on sale at 1/2 price often at We LuvLocals--keep your eye out).
We ate at Del Friscos on Paradise during Restaurant week and had a wonderful Filet Mignon for their $99 for two Restaurant Week Special. The food was incredible, service and atmosphere excellent and it's so nice eating at a restaurant that doesn't have a plasma TV blasting on every wall. The waiters were very attentive, asked us to cut into our steak when it was served to make sure it was exactly right before they left, etc. The only service that I've ever had at a restaurant that was better was when we used to eat at Perigrines at the Hilton in Atlantic City.

I am from Kansas City and we like to think we know steak pretty well, but I do think the best in LV really does depend on the type of cut you like. I really like The Flame, where I had a filet mignon almost as big as a salad plate, and could cut it with a fork. My cousin is a ribeye guy, so we are also going to The Steakhouse in CC this weekend when we're in town--and he owns a cattle ranch.
1. Joe's Steak and Stone Crab. Not that I'm into celebrity viewing, but Evander Holyfield was at the table next to us the last time we were there. Pretty cool. My wife kept trying to look at his ear. Oh, and the NY Strip I had was the best I've ever eaten.

2. Binion's - Especially if you can get a booth with a good view of the city.

3. Kokomo's - Have not been since they remodeled it a few years back, but the original setup had a great steak.

I always liked Morton's of Chicago.
I like the atmosphere and feel very comforable, not too stuffy.
It may not be the very best, but it does it for me.
