Food Enthusiasts Gathering in Vegas

I might be hosting a Food Enthusiasts Gathering in Vegas in October. I have some great suggestions from Westie and Heidi on some interesting things we could do. So far my list includes: The School of Pastry Design https://theschoolofpastrydesign.com/chris-hanmer/ will put together a class that is like a Pastry Chef Competition similar to Top Chef or Chopped. The cost is $50.00 a person. The school is housed in the same building as https://www.chefrubber.com/ so this is also a great shopping opportunity. Other things to do include the Jean Phillipe Patisserie which has a Huge Chocolate Fountain. This is around the corner from the conservatorie in the Bellagio which is always amazing as is the regular fountain show out front. There are also quite a few restaurants that offer tasting menus. The visitor volume in Vegas is way down, so the restaurants have been pretty slow also, so I was told there are a few who would cater to a group such as ours (Private Dining Room and the Chef Cooking the meal in front of you etc.) Technique is the Student run restaurant at the Le Cordon Bleu in Vegas. They offer a 5 course meal for $15. There are Wine Bars in certain Casinos. There is the Double Down Saloon that is Famous for their Bacon martini. There are some fun restaurants like the Peppermill and Hash House a Go Go. The Ellis Island Casino has a Steak Dinner that includes one of their Microbrews for $8.00 and it is very good. The Golden Gate has Excellent Shrimp Cocktails for $2.00. There are a few ethnic neighborhoods that offer some unique shopping.

Does anybody have anything to add to this list?
Wow! This is ambitious. Not sure where to begin with suggestions, but the Eating Las Vegas book would be a good place to start.

Dim Sum at Ping Pang Pong could be fun with a large group.

Luv It Frozen Custard would be a good off the beaten track kind of place to visit. Not too many frozen custard places around anymore.
