Fremont East restaurants

I have a group of 14 of us who have been doing a college buddies Vegas trip since 1984.  We're all between 55 and 62 years of age, and we'll be staying at the Golden Nugget.  I'm the organizer, and one night I always arrange a nice meal out for the group.  We have some guys who are comfortable with $150 per person for the meal, while others tremble at $50 even though they make plenty of money.  I'm leaning towards Carson Kitchen, but I'd like to hear from those who know this area well.  I already know a few places in Fremont East, and pretty much all the restaurants by the Fremont Street Experience.

I'm looking for $75, out the door, including tax, tip and a drink or two.

Suggestions?

Binion's Steakhouse is Downtown has Fantastic View and offer's Steaks to Die for; you should be able to get out for $75 each if your careful!

Robert, thanks for the suggestion.  I'm familiar with virtually all of the restaurants under the canopy.  I'm looking for advice only on the Fremont East area.  I've been to Binions, and like it.

Fremont East is mostly street food, nightclubs and gastro pubs.    There's not much there in the elevated price range you state.
