Red Rock's Mexican is average at best. The biggest problem: limited choices. I think Sunset, Aliente (and probably Texas, but I haven't been in a long time) are better choices for Mexican -- and at a lower price.
The hit for me at Red Rock was their little chocolate cakes (that might supposed to be lava, but over done for that) with a variety of sauces. That was a killer dessert -- and except for ice cream, I can't eat most desserts at buffets.
