I was there in Sept of 2021 and when I was giing around to redeem my LVA book coupons, I found I had to go back on Thursday to use them. That was a few months back, but I don't know if the way of doing things has changed.
Anything like this situation, there's no point in reporting what's currently happening, because next week, it'll probably be different.
The Grand can be like a ghost town on weekdays, and table games being closed then predates the pandemic. In fact, several of the outlying downtown casinos have few or no table games open during slow times--especially now, with ongoing staffing shortages.
So I would do any coupon runs early in the evening and/or on a weekend.
When I was there on 12/8/2021 which was a Wednesday, none of the table games were open the entire day and evening at the DT Grand (not sure about Monday and Tuesday as I wasn't there). But if they weren't open on a Wednesday then, they very likely would not have been open on that Monday and Tuesday (similar to your experience earlier in the year). They were open Thursday the 12/9/2021 in the afternoon when I was there.
As Kevin Indicated, TO BE SAFE call a couple of days ahead to find out their schedule for the day(s) and times you expect to be there.
