Doable how? To stay/eat/play?
The entirety of Vegas ain't doable right now IMHO.
Wondering how "with the wife" impacts the decision? No concern if you are going solo?
One post below this one by Fast contains some positive comments about the GG. Haven't been there myself.

To stay? I'd likely just dabble play at the D or GG. I'm not looking to play a lot downtown for just one night. I know it will be loud.
Yeah, the wife and my standards are a little different Candy.
For table games, fine--for VP, awful. Food, reasonable. Atmosphere, OK. Location is good if you want to visit Plaza, 4Q, Grand, etc.

VP awful? 8/5 BP progressive (frequently with EV 100+%) for the low rollers and juicy mailers for those that put through several $K CI per day along with very generous F&B amounts in those mailers.
Food reasonable? There's NO FOOD at Golden Gate

OP: Staying there with the wife? Best cross your fingers they don't stick you in a closet-sized room overlooking Fremont St. Now if your wife is ok with the tiny room and hearing "Welcome To the Jungle" every hour outside your window until 2AM then, yeah, go for it bud.
LOL. I did an overnighter date in one of those closet-size rooms overlooking Fremont, and this was back when the GG had their piano snack bar. I don't really recommend it.
If it was just one night, you could likely muscle through, but don't ask the wife to handle back-to-back in a postage stamp room with "Welcome to the Jungle." Not the percentage play.
And I'm saying this as someone who routinely stayed at the old style Gold Spike and occasionally at The Western. And who loves "Welcome to the Jungle."
Pay the cash. Get a better room.
If money's tight, consider The Four Queens. Not going to dazzle you, but it beats the "Welcome to the Jungle Special." And the food's good.

A solid decision! Anybody can handle a one-night adventure. Plus you'll have those lyrics memorized for future karaoke.

I considered the GG and Circa to be one property, so I lumped them together as far as food--and VP. As you note, if you gamble at GG, you get food offers that can be used at Circa.
I consider any joint where the BEST game is 8/5 VP to be a lousy place to play. Especially when downtown, there are many much better games within easy walking distance.
The problem with proximity to the FSE exists pretty much everywhere downtown. Most casinos have SOME rooms that are less affected by the noise, but those go first and are usually significantly more expensive. Downtown is for the deaf.
