I know Vegas is blessed with a lot of great entertainment. How do you find out about cover bands and Acts such as the Eagles, Garth, Carrie Underwood, etc.

Also, the Bronx Wanders are starting a new residency at Westgate beginning 9/20. https://www.westgateresorts.com/hotels/nevada/las-vegas/westgate-las-vegas-resort-casino/entertainment/bronx-wanderers/
I dont know of a comprehensive resource that lists all the local talent and their schedules. Your best bet in my experience is to just wander around until you find a group you like....then take down their name and social media page so you can find them next time you are in town.
I always try to catch Yvonne Silva when in town....she covers songs and writes her own stuff ....and she bounces arounda all over town.
In my opinion, there tends to be great cover bands at Harrah's Carnival Court. I've not been there since Covid, so it could have changed. It's outdoors so open only about 9 months a year. You won't find a band cover just Garth Brooks for example, but you'll find some real talent covering numerous songs on a given night. It's center strip and a lot of fun.
The question is about cover bands, but I'll add that Legends in Concert was one of our favorites and I've read here that it is coming back now or very soon. This is an impressionist show (they prefer that word to impersonator) (Cher, Barbra Streisand, Elvis of course, probably newer acts now). It ran a long time, very popular. Once when we went a guy doing Jay Leno as the emcee was a jaw dropper, so spot on. They said they got thousands of audition tapes a week and most didn't come near making the grade. They showed a brief film of some really bad audition tapes...funny.
Anyway, if Legends is back, I'd go see it. We never missed going to see Legends every trip. Different 'artists' every show. It was inexpensive, too, back then.
