I'd say that it depends on the game that you are going to play as well as its volatility. I'm fine with 9/6 Jacks, 10/7 or 9/7 DB, FPJW (Kings Or Better), Pick 'Em, and maybe 8/5 Bonus Poker.
And so a Volatility rate of anything above about slightly above 28 or so is higher than I want to deal with. And so usually, 10/7 Double Bonus Poker is about as volatile as I am willing to go.
As for the Video Poker training programs, you can set these programs up so that you can be told when you are making a playing strategy error and at least some of them can generate a good playing strategy chart! So I'd encourage you to practice on them if at all possible.
