The more different sports books there are, the more oppurtunties exist to find different lines on games. I am thinking there are only three diferent ones downtown. William Hill, Boyd, and the Golden Nugget. Any other thoughts on this?

Yep, that's about it. The El Cortez has teamed up with Stations.
William Hill dominates downtown, with Boyd number two.
I remember in the "good old days" there were five or six different books downtown. During the college football season I would get there Saturday morning and try and catch a middle or two.
I think even if you took into account the strip and the Westgate you'd be hard pressed to add a handful of books to the total. I would think you would need days to hope to have a chance to middle a game.
In football, the best chance to middle games these days is to develop a sense of where the line is today and where it will be at game time.
An old adage is to bet favorites early in the week and dogs on gameday. Apply this to popular fan favorites (Dallas, NE, Pitts).
Remember that you only need 1 win in 22 attempts to break even.
