I am a minimum bettor on table games. I have 16 matchplay chips ($25 each) good at the Golden Gate that I have been saving from my trips. What table game(s) should I play these at and what strategy should I use?

That depends on what your goal is.
If you want to maximize the value of those chips, realize that they're worth a little less than half of their face value. The reason is, half the time (when you win) they'll be worth $25, and half the time (when you lose) they'll be worth nothing.
(In case you don't know, matchplay chips are taken from you whenever a bet is decided--you don't get a "real" chip placed next to your matchplay chip when you win; rather, your matchplay chip is replaced with a real chip.)
If you want to just play them one by one and see what happens, your best play is to bet them on the Pass Line at the craps table. That's better than blackjack, assuming they deal 6:5. You should average about a $200 net result.
If you want to nail down a profit that's close to the value of the chips, here's what you can do:
Bet $X in matchplay chips on the Pass Line.
Bet the same amount of matchplay chips on the Don't Pass.
Bet 1/60th of the total amount you bet on 12 (in cash).
(All of this will have to be done on the come-out roll).
You might be prevented from doing this (though I've only had that happen once out of about fifty times). You can then a) give half of the chips to a friend, have him stand on the other side of the table, and tell him to bet the Don't at the same moment you bet the Pass; b) put ALL of the matchplay chips on the Pass Line, and half that much in cash on the Don't. In both of the preceding cases, put 1/60 of the total amount bet on 12.
This way, you will wind up with a profit of a little less than half of the value of the matchplay chips regardless of what happens.
Holy Craps. I'll try the one at a time bet on the pass line. Feeling good I'll go the "don't" method.
Thanks.
Going to the Gate in December.

That was refreshing. I actually have goosebumps.
Thanks Kevin.
Your "craps strategy" worked like a charm using my match plays. Dealers at the Golden Gate were very nice about it ... even tipped them when I finished.

Glad to hear it. It's always good to have a simple strategy in your back pocket to "launder" matchplays and free slot play (for the latter, I find a JOB machine, even a short-pay one).
I've done the LVA downtown coupon run many a time, and it's kind of hysterical that after I play, I get the opposite effect from what was probably intended---I don't want to play any more! I mean, if you're not going to pay me 2 to 1 when I win, why should I play?
I definitely support toking the dealers in general, and after you've had a nice matchplay win especially. After all, it was pretty much free money.
I remember one woman who set a record as far as I've ever seen--she had an entire booklet of $5 matchplays, bet them all one by one at blackjack, and lost all twelve hands. I told the dealer that they should change the name of the coupons from "Lucky Bucks" to "Doom Dollars."
