woah! I am completely jealous of that trip. I've done cheese, chocolate and croissant walking tours to shops in paris and other places, but never to a cave. I need to get back to Europe!
I thought poutine just had cheese curds, what did I miss and now I need poutine.
As far as being "allowed to eat it" goes, I'm not aware of any FDA or other rules against it, though I'm sure there are some rules for preservation if it's marketed and sold to the public.
We have a couple of major cheese producers on the Oregon coast, and you can buy raw milk cheese from them if you order it ahead of time. The northwest coast has lots of year-round green grassy fields full of happy cows. Tillamook cheese is the BEST.
Tillamook is delicious, I'm also a fan of Rogue. One of my favorite west coast cheeses is Mt Tam triple Cream from Cowgirl Creamery. Mmm. Makes me want to pop a bottle of nice wine and savor some cheese.

Found a bottle of Paetra Gewurtztraminer (Oregon), and all I had in the fridge was some aged Vermont Cheddar and a 60day aged Fulvi Pecorino Romano with a nice thick slice of Elk summer sausage. Will need to get some pungent cheeses this weekend.

West Coast wine has been proven to have high levels of glyphosate and herbicides unfortunately. Not sure about the cheeses.
