The extra plumbing needed wouldn't make sense, and the additional syrup canisters would take up under-the-counter space that simply doesn't exist in most places. When I was remodeling a building to open my bar back in the 1980's, Coke and Pepsi both presented offers to be the soft drink supplier. The offers were very close to each other concerning what they would provide and install at no cost to me - all plumbing, dedicated refrigeration and dispensing guns. The deal breaker was the guaranteed contract pricing on the syrup. Pepsi was about 10% lower than Coke, so Pepsi it was. I happen to prefer Pepsi over Coke so that was an even easier decision.
Edited to add, beer companies do the same thing concerning what is available on tap, although the plumbing for individual brands isn't as complicated as setting up a soda gun that can dispense 8 or more different products.
