How long does it take for the city to take down all the F1-Race infrastructure after the race ends? I was thinking about a Thanksgiving trip this year but I dont want to be out there if its a giant traffic jam with the race crap coming down.

This year's race is on November 21. Thanksgiving is four days later.
Very little of the demobilization will be done by then.
For instance, last year, the temporary bride at Koval and Flamingo didn't come down until December 19.

Ugh....ok thanks. That race really ruins the entire Fall in Vegas which is the best time to go

Vegas definitely has temporary brides, but I assume you meant temporary bridges.
We went this year after F1 and it wasn't too bad going down the side streets and going to Ellis Island from Harmen. Things are also better now that Dropacanna is done

Fall a wonderful time to visit.I think you should go and try a blind eye.
As a downtown denizen, I was in Vegas the week before F1 this year. The race changes only impacted my journeys to Ellis Island and to some favorite spots on Tropicana a little, but nothing too bad.
I think only a person who stays along the strip between Spring Mountain and Tropicana should be concerned enough to cancel.
