Wow, there's so much to say about this!
How soon are you coming to LV with her? I'm asking this because I'd encourage her to get better in Video Poker play if possible first. This can be accomplished (or at least helped with) by getting her a good Video Poker training computer program (such as "Video Poker For Winners," "Optimum Video Poker" or "Frugal Video Poker")? I say this because playing strategy errors can lower a game's overall return from an additional 2% to 6% making even a decent game go bad. And so the sooner that she can learn what's what, the better off she'll be! There also is some Free training (where you can set it so it will tell you when you are making playing strategy errors) on the Wizard Of Odds website in the Play For Free section.
I think that it's better to play on Video Poker games whose return in and of itself (not including Slot Club benefits) is not less than 99.1%. You can check on https://www.vpfree2.com, then click on the "Casinos" link and you can see what the Las Vegas area casinos have to offer.
As for Slots, I can't say much about them except that Penny machines are pretty bad (check out the Gambling Podcast video on the American Casino Guide website about Penny Slots). Although it might be one thing if there is a machine with a Must Be Hit by $X progressive jackpot when it is near that point.
As for gambling, Downtown has better gaming than the Strip (at least at the lower denomination levels).
What about her having some nice casino gaming and whatnot coupon books like the LVA MRB as well as the American Casino Guide?
And even though you say that she is not into table games, what if you went to places which have the "Win Cards" with the Non-Negotiable Chips? You could have some fun and make some money or lose less than you could. Casinos offer one or both of $30 in Non-Negotiable Chips for $20 and/or $15 in Non-Negotiable Chips for $10. For example, Circus-Circus offers players both packages and so you could in total have $45 in Non-Negotiable Chips for $30. For some info on this, go to www.wincards.com
As for what to show her, how about going to the Neon Museum, the Fountains at Bellagio (when the shows are going on) and while you're at Bellagio, you could see the Conservatory? What about the Free Circus acts at Circus-Circus? And what about going to casinos that have been around for 20 or more years such as MGM Grand, Harrah's, Bally's, Circus-Circus, Mirage and Treasure Island (although I can't recommend gaming at least at most of these places -- except maybe Circus-Circus -- check VPFree2.com about this since Strip places aren't known as the best returning places)? Also, there's the Caesar's Palace Forum Shops along with the Animatronics Show.
Also, be aware that returns nowadays may very well be worse (especially on Slot Machines and Video Poker to some extent -- do try avoiding if you can games returning any less than the 99.1% rate that I mentioned earlier) as opposed to what they were 20 years ago and so playing as she did before may not take her as far today as it did 20 years ago. This could feed even more to playing at least in Downtown LV as opposed to playing on the Strip.
