In light of today's (8/27/2015) LVA QOD, within the Chabad Of Southern Nevada website (at https://www.chabadlv.org) is a link called "Visitors' Guide" which is "The Jewish Visitors' Guide to Las Vegas" and within that is information about accommodations both on their own premises (Called "Chabad Suites") as well as listing the nearest Hotel/Casino (which is Arizona Charlie's West).
Chabad of Southern Nevada does arrange for services and Kosher food for some of the major Trade Shows at Strip Casinos, so check with them for that.
Plus through there is a listing of many of the Kosher restaurants in town (although they may or may not list other Kosher restaurants who have Kosher Certification that is not done by Chabad Of Southern Nevada), so be aware of that!
