There actually is a new show (2014) on the Biography Channel called "Food Tech" and it has an episode about Buffets. This show focuses specifically on the Carnival World Buffet at Rio with not only about how it's staged, but it also shows the host Bobby Bogner checking out (being involved with): Catching Shrimp; Getting Horseradish (for their Shrimp Sauce); Getting Honey (for their Honey Glazed Ham); Getting Spinach (for their Salads and other foods) and getting Sugar (for their desserts). The host mentions many facts about how much stuff is served and how much stuff it takes to prepare the foods for the buffet.

So check it out! It is also available to be viewed on "On Demand" with at least Cable TV (Check your Cable TV operator for availability).
