Thanks to the great suggestions I received from this forum, I was able to try a few golf course in the Mesquite / St. George area.
(Mesquite)

When we arrived in Mesquite, the weather was extremely windy and we choose not to golf that afternoon as it would not have been enjoyable whatsoever. In fact, it was so windy that a few power lines went done and the entire city of Mesquite, Nevada had lost power for about 16 hours! That was freaky in the evening as the only places with limited power were the 3 casinos. We actually choose to drive to St. George, Utah as they had power and hot meals! (The Mesquite casinos reserved their power for slots, table games and booze)
Hence, we had a chance to actually get a sense on how big St. George was. We even had a chance to visit the St George Walmart and pick up some flashlights which came in handy when getting back to the hotel later that night.
Because we declined golf on the windy day, we choose to splurge and try out Wolf Creek. It was not cheap! The round cost us $180.00 per person and we started at about 10 a.m. Like the previous reports, it was awesome with lush fairways and incredible scenery. It was sort of interesting how the starter ensures that you "sign you life away" on the golf cart before you proceed to the 1st hole. I guess they loose about 3-4 cars per year which go over the edge. While they certainly have numerous safety measures in place for the golf carts, I can see how a nervous driver might feel navigating the cart up and down the steep inclines and declines.
We thought it was a little strange that they did not have GPS on the golf carts. One staff member said that they used to have GPS but it was unreliable. Apparently, they are designing a phone app for this application. That being said..... don't count on have reliable cell coverage on the golf course. The cell coverage for us was sketchy to say the least. (I was trying to arrange my flight arrangements during my round of golf, but had no luck).

Sand Hollow - St. George Utah

We choose to take advantage of Ken2v's recommendation and try out Sand Hollow Golf Course which is located just outside of St. George, Utah. Earlier that morning, we jumped onto the GolfNow phone app and looked at rates. We saw that Sand Hollow was offering a decent twilight rate of $50 for an afternoon rate. But, we choose to call the course directly and see if that rate would be applicable with the golf course and not the Golfnow App. I am not sure whether they offer that rate or not, but they agreed to meet that rate. (Side note: the golf course makes more money by doing this then having to give GolfNow a commission)
We had the 1st twiglight tee-time of 2 p.m., so we used my friend's GPS on his phone which put us in the middle of a residential area in the middle of St. George, Utah. We used a different phone and found out that we were about a half hour away from getting there. We called the course and told them that we were lost and we would be there shortly. They had no problem with this. (I am not sure we could have got such an extension if we used the GolfNow app.)
Sand Hollow is in the middle of nowhere! We quickly checked in and we were off. We did not see another golfer for pretty much the rest of the day. We never waited once to shoot which allowed us to really have a nice fast pace!
The first thing that was impressive was the orange colored bunkers. That was really neat to see that. The course was in great shape and well watered.
The back nine was simply impressive and it felt like we were back at Wolf Creek... but paying a fraction of the price.
