pool/bars/hotel for mid-30's couple?

Looking for some recommendations on where to stay during a 3-night trip this July. My wife and I will be taking a getaway trip away from the kids for a few days and we're looking for someplace with a great pool - preferably with a swim-up bar. We're drinkers but are NOT into the "South Beach Club" feel of most dayclubs - and nightclubs for that matter. We're much more comfortable relaxing out by the pool with beers in our hands and perhaps playing a couple games of water volleyball during the day and then going to a bar atmosphere at night with pool tables/bowling/darts/etc. Don't really care for places that are so loud its impossible to have a conversation. If forced to look into club atmospheres we'd want a rock/punk atmosphere and not house/hip-hop. Looking for a good hotel (i.e., not cheap) and preferably on the Strip, but open-minded. We've heard good things about a couple places (i.e., the Wynn & Cosmopolitan), but we're worried their too "chic" for our liking. We've also heard good things about Bellagio & Paris LV, but are worried that their a little to laid back and upscale for us. Any thoughts/recommendations from the Vegas experts out there?

I am taking a friend in July for her anti-anniversary/divorce trip. All she really asked for was a good pool. After looking and looking and comparing prices the Flamingo was by far the best choice (Golden Nugget was the best downtown choice but sold out). The pool is nice and more then just a big concrete hole, the location is fantastic and the hotel is not stuffy. There is a reason it has become my go to hotel for years, this is the first time I have ever cared about the pool.
Mandalay bay has a great pool area. Wave pool, lazy river, beach sand, etc. And if you guys change your mind about the day club they have a topless pool/dayclub also that is separate.

The Orleans has a Decent Pool but it is Off-Strip, They Do Offer a Free Shuttle Bus to the Strip
With so many great pools ON the Strip I wouldn't waste time shuttling to and from The Orleans. IMHO
