I just reached Ruby level of 125. Just what does this do for me. Seems like everything is still the same.

My guess is it makes more rewards available to you for redemption. Might also increase the rate of rewards credits

I'll be hitting level 59 and among the bonuses are 5 more additional rewards available to my account

The only difference I have seen, is the chip value on the daily wheel has increased somewhat. No other benefits. Still just 3 rewards allowed and the same high amount needed for redemption.
