Oops at the Sportsbook

What about online? About 6-7 years ago I owed directbet.com (anyone remember them?) 2K and they settled that by paying me 2K instead. That's how it ended up. I didn't lose much sleep over it.

In the sports book you are paying for them to set a line. If the line is wrong or stale then you can take advantage - a bet is a bet. But you might not accept a mispayment for the same reason you might not accept a mispayment at the gift shop or cashier. But at table games the service [I]is[/I] the payment. You play a disadvantageous game in order to get paid properly. It's not your job to add the cards at blackjack; it's the dealer's. So if they overpay then they haven't done their job. By analogy, consider those rip-off currency exchanges at the airport. I would feel less guilty about accepting their mispayment than a casino cage or supermarket mispayment.
