Hi, could you please let me know if this one is just free mimosas for 1 person, or for 2 if both are paying for the buffet? Thanks

Don't know. This was a last-second inclusion and we neglected to clarify. The problem is, there's no easy way to determine, because of all the different departments involved and it's new to the front-line employees. Until we can get to the bottom of it, the treatment will come down to what the person at the buffet decides. I think you have to assume that it's for one only, but best to ask at the front before you go in and see what they say.
Wow, great coupon! I'd 'play dumb' and anticipate/expect it means free mimosas for both paying. Include a small tip to the buffet cashier while paying. "That's for you."
I wouldn't argue if told otherwise, of course. Just say "Oh, OK, the coupon wasn't clear about that." Always with a smile.
Doesn't hurt to play dumb, sometimes.

If your buying two buffets, both should get the drink deal. Has to be.

Unfortunately, no. An ironclad rule when dealing with casinos, in any way, shape, form, context, or situation, is that what YOU, the (ecch!) customer, think is fair matters less than a donkey's fart. (Try telling them parking fees are unfair and see what happens.)
Since the coupon is worth about $20, I would expect them to NOT allow you to use it multiple times, any more than you can use a matchplay to apply to both your and your companion's bet.
Candy's right, though, in that whether you can double-dip might depend on the cashier's mood/cluelessness.
