Empress Court is closing, probably has closed, or that would be a play. But it is being replaced with another Chinese (or Asian?) restaurant in the same location. Don't know when that one opens, but no doubt some vegetable dishes will fit your needs.

Of course the big buffet will have vege dishes.

Vege pizza, wherever they have pizza.

Try Guy Savoy at Ceasars Palace. You will go through $500 pretty fast but since it is a French restaurant, many of the dishes are not focused on meat.

Joe's Stone Crab is very good. I don't know if that would qualify, however.
