You exit at Lake Las Vegas. Lot's of picnic spots along the way. Last time me did it we saw wild horses.

This is the time to go out there. In a couple of months, it'll be WAY too hot to do any hiking or otherwise enjoy the place.
That said, my choice for a beautiful place to visit, hike, take pics, etc. would be the much closer Red Rock Canyon. That scenic drive through the state park is gorgeous.
And of course, visiting Vegas for the scenery is kind of like visiting Cleveland for the wineries, but sometimes you just gotta get away from the slots. Good news is, the weather is perfect to actually be outdoors now. You don't want to try that in summer, what with all the sidewalks melting and birds bursting into flame in midair.
