Corned Beef and Cabbage Anyone?

Faye is cooking up two CB briskets for dinner tonight. UMMMM!!! Can't wait to slap on some of those delicious slices on top of a grinder roll with mustard! Needless to say the potatoes and cabbage will add plenty of taste to the mix. Especially with the broth she cooks everything in in the pot! UMMMM!

Delicious as it is - and it is - i really like it - on St Patrick's day, the Irish eat cabbage and bacon - not corned beef. Sorry to be a dampener on the festivities, but the facts is the facts - take it from someone who lived a loooong way East of here! But save some for me - I really like good corned beef!
There are 34.5 million Americans who list their heritage as either primarily or partially Irish, a number seven times larger than the population of Ireland itself (4.68 million) (add another million and a half or so for Northern Ireland). Irish is the second-most common ancestry among Americans, falling just behind German.

Since such a huge portion of the Irish people live in the United States, seems to me that Americans get the biggest vote in deciding what should be eaten in celebration of St. Patrick's Day.


While I don't dislike Irish food, corned beef, boiled cabbage, and boiled potatos are hardly anything to get excited about. I think I can understand why Irish whiskey and beer becames so popular to the Irish.
teechur and DonDiego dressed in their green togs partook of a Saint Patrick's Day lunch. teechur had a burger and an iced tea; she is predominantly Polish. DonDiego ingested fish and chips accompanied by a large Guinness. DonDiego is roughly equal parts Irish, German, English, and Polish.

Hubby bought a beef brisket from Costco last week and pickled it. Don't know what he did as it's his thing...slow cooked it on the charcoal grill. All I did was roast potatoes, carrots and cabbage in the oven. Yummy! Had family over yesterday afternoon for an early dinner. Bought some fresh baked rye bread from a polish bakery for the best sandwiches...smeared with some homemade horseradish(my s-i-l makes) or dijon mustard. The beer drinkers really liked the Guiness Black. Enjoyed our feast!
Going to eat the leftovers tonight. Can't wait!
