The more people in your party, the more dishes you will be able to sample. My wife and I usually max out at 3-4. Don't be intimidated, the carts keep rolling so try one dish and then order a second from another cart. No one will be insulted if you don't order anything from them. If you are uncomfortable using chop sticks, just ask for a fork and knife.
