Foodies - Baked Potato Salad

I know on the paid side there are a bunch of foodies that give out recipes, so why not on the FFA?

I made this last summer and loved it! My brother also made it for a party and people couldn't get enough.

If you enjoy loaded baked potatoes, you'll love this dish. Thought I 'd pass it on since it is summer and potato salad season. 5 stars on the food network website and I thoroughly agree!

Guy Fieri's Baked Potato Salad
Wrosie - how funny that you should post this today. I had this last week for the first time and when I tried it I told my husband not to have any because he would never be satisfied with my potato salad again! I made sure I got the recipe from my sister-in-law and just made it last night for a party we're going to today. The recipe I used didn't call for vinegar, but it did include a cup of shredded cheddar. I also used reduced fat sour cream and mayo to try to make it a little healthier. You are totally right - this is one delicious salad
I also used low fat sour cream and mayo as I thought this recipe had artery clogging possibilities.
That sounds yummy.



The recipe calls for 4 to 6 gherkins. Before today, I've never heard of a "gherkin".

Here is wikipedia's definition of a gherkin:

The gherkin is a vegetable similar in form and nutritional value to a cucumber. Gherkins and cucumbers belong to the same species (Cucumis sativus), but are from different cultivar groups.



Why is it called "baked" potato salad?
I thought a gerkin was a sweet pickle.
Do you serve this warm or cold?
I saw this on Oprah YEARS ago, and it was a wonderful cobbler, a secret she adds to it was a tiny amount of almond extract.
My Dad asked for it when the peaches came in season

Medic - you serve it cold, just like regular potato salad. The recipe I used calls for the potatos to be cubed, then baked in the oven. Maybe that's the reason for the name. Or maybe its because it tastes like a loaded baked potato. I know the thought of eating it cold doesn't sound right but believe me - it is delish.
