Baked Bean Salad
1 large(i think it's 28 oz) can original Bush's Baked Beans
1 15 oz. can red kidney beans
1 15 oz. can white kidney beans
1-2 hard boiled eggs
1/2 cup diced celery
1/2 cup diced green onions
1/2 cup diced red or green bell pepper
1/3 to 1/2 cup mayo(depending on how creamy you want it)
Salt-pepper to taste
finely chopped fresh parsley..to taste
Drain off some of the liquid from the original Bush's baked beans. Put in large mixing bowl. Drain and rinse the red & white kidney beans. Shake off excess water. Add to bowl, along with chopped eggs, celery,onions,bell pepper. Add 1/3 cup mayo, seasonings and mix. Add more mayo if you want a creamier consistency. Refrigerate for at least 1 hr.
