I had a tile counter top before. Hated it. I love the look of granite but my wife loves the smooth sinks you can get with solid surface. The Wilson Art solid surface faux granite and the DuPont Zodiaq both look real nice.
And a few more. Actually my brush skills are still with me so thats cool, also helps i've always been just as good as my right bit, it is interesting how helpful your pinkie is tho, kinda like a little rudder. As you can see,we have har wood (white oak, poly finish) so thats why leaning more on a brownish, tuscany than black(its a little cold/serile to us). Will be easier to choose once cabs are complete.

No reason you can't have a "smooth" sink with granite tops, unless you mean one that is integrated as with Silestone or similar.

Also a big fan of concrete tops in the "right" application.

My wife likes the integrated sink where there are no seams or places for anything to hide.

But she puts up with grout?

No single answer. An undermount with silicone ... not much is hanging around in those space. Of course, undermounts and particularly one-piecers are problematic if/when something breaks or you want a change in look.
Better look at a final finish one, front anyway.

Sniely, was that your kit in that first pic? We haven't chosen a sink yet but i do like a drop in porcelain job with deep bottom. I ddon't care much for uner mounts for the reason ken just mentione. Also, you mentone about your contractor getting a iscount on the granite an you went thru home epot. Didd he get the top there at a iscount?,cause they never used to give them, not even employees.I would buy anywhere from 7-10 5'rs of paint an never got one, Maybe they've changed.

I looked into concrete, possibly being able to o it myself with some help. I could probably stumble through it and make it look halfway decent, but for that and the fact that my wife woul kill me 'cause it woul prob take a looooong time as it woul be a firs for me and getting a pro isn't cheap.
J, unless you just like the aesthetic of a topmount, don't read too much into "disadvantages" with an undermount. Unless going with something relatively cheap and fragile like formica, with it's lack of heat resistance and being prone to staining, burns and cuts, if your top is durable and you don't sense a change of heart in 10 years, I'd not fret the undermount (and of course formica is cheap and easy to replace so sink placement is moot). But the key here is what look you want. And are you considering farm front? That can be way cool in the right application. One big regret here with our "modern" kitchen is the dual sink. We had a huge one-holer, really deep, zero-radius. Awesome. Bought it online in fact from an outfit in Vermont. Now we have two basins neither of which is all that utilitarian. But the four burners is the worst part.

Here's the sink:

I'm one of the few people in the world that's not in love with granite countertops and stainless steel appliances.
Last year we got new appliances, white. Painted the cabinets white, walls were painted frivolous berry(deep orange), decided to paint the front of the drawers with the berry for contrast. Added 2 cups of berry to white ceiling paint...love it. Went to Home Depot for new Wilsonart HD countertops in dessert passage. Bali lightblocker mini blinds on the windows in a deep chocolate brown. Had a little berry paint left, decided the cabinet doors needed a pop of color, so I used a sea sponge and sponged the door fronts. Not for everyone, but, we love the results.
Not my kitchen. My kitchen is all brown. Medium brown cabinets, light brown faux granite Wilson Art laminate, and light brown porcelain tile diagonal backsplash with a few fancy tiles. Stainless appliances. Faux ceramic tile laminate flooring.
