Opossum

So, like, folks in places like California and Illinois and New York enjoy comestibles like chicken and pig. And folks in the real America, like Montana and Wyoming and the Dakotas, are partial to grizzly bear and bison. Of course folks in Florida eat fish.

It is in this spirit of assuming the spirit of what one ingests that Appalachians enjoy opossum.
The spirit of the opossum is, . . . umm, . . . feisty.


And it's good for one too, . . . providin' 15% of ones daily requirement for fat.


Most folks in these parts prefer opossum baked and served with a side of candied sweet 'taters, if'n they can get ahold of the candy makins.
But poor old DonDiego, whose cookin' and bakin' skills are limited prefers dishes like curried opossum and, even simpler, creamed opossum straight from the can, . . . and accompanied by gooseberries, or huckleberries if'n that's all one has.



So how do other LVAers like their opossum? And, please, . . . NO KETCHUP !




Hard to beat Roadkill Possum Tartare. Just season to individual taste. Yummm...

And don't forget the armadillo variation known as Roadkill Possum on the Half Shell.
pretty tough to beat the "coon fat gravy" ummmm,ummm!
Would one suggest that it tastes like chicken?

Tastes like marsupial.
Ah the pleasures of living the good life in Appalachia DD?
Not sure about possum, but armadillo taste like pork.
