Rabbit recipes?

We have a great source for rabbit here, but always end up using the recipe from Balthazar.
Thumper would not approve.
Personally I like Roast Duck better than rabbit.

No - rabbit is dryer than chicken - which is why a little bacon is necessary.



I saw something that was mildly interesting on a cooking show the other night, something I didnt' know and I own and have read about a 100 cookboks and a recipe I never knew. It was welsh rabbit(i guess i always skipped over it because I don't care for rabbit) and that it doesn't have rabbit in it all, it consists of any sort of cheese sauce over toast. It's considered a poorer mans' food.
Traditionally it was Welsh Rarebit - delicious when made properly. Over time the name has corrupted into Welsh Rabbit.
