Follow-up,
Ribeye was perfect. I had mine medium-well - it came with some fingerling Potatoes and grills small onions. There was need to order separate side dish.
My GF had the gumbo, and said it was the best she has ever had - although after she tasted my grilled cheese I could see her eyes popping over to the remainder of my sandwich........so I gave her ONE bite more (just ONE).
NOTE: when seated we were given the full menu. I had to ask for the pre-fix menu (although they had a huge sign outside advertising the special meal).

Carson Kitchen:
We have eaten there and enjoyed the meal. It is worth combining with a downtown trip to the container park and a stop off at Jin-Ju Chocolates at the container park.

GIADA:
Yes we went there and also returned for a second time. Breakfast was amazing. I had the eggs with sweet sausage meatballs, lemon smashed potatoes. That was the best tasting meatball (better than the meatball at buddy V's).
Also of note was the non alcoholic drink called Dolce Vita,
