Southern Deep Fried Chicken Recipe

I'm not a great cook by any means, but I can GENERALLY follow a recipe well. Tomorrow I'm trying a first for me and my boy. It calls for soaking 4 chicken thighs and 4 legs in milk for about 4 hours. After the soak, you boil the chicken in the milk for about 20 minutes, then remove and and let it cool on a rack.


I'll mix up a simple blend of salt, flour, and cayenne pepper in a gallon freezer bag. Next you put 1-2 pieces of chicken at time into the flour mix and shake, then into an egg mixture, then back into the flour mix, and finally into a cast iron skillet with Crisco at 350 degrees.

In addition to the chicken, I'm going to do some store bought Bob Evans mashed potatoes (with frozen homemade gravy), a salad and vegetables on the side. PJ, chicken thighs and legs are on sale at Marsh right now for $0.99/lb now.
Do you also do windows?
Sometimes, but only mine.
I have never heard of soaking then boiling chicken in milk. I assume you would use a regular milk or buttermilk?

The recipe calls for regular milk......................vs buttermilk.

Couple suggestions, soak in buttermilk and have two bags to shake chickien in. The first with flour only, the second bag with flour and seasonings after the egg wash( a lot of the flour crust will come off in the bag, it gets messy, reason for two), try to keep as much of that crust to firmly stick.

I've read a boatload of fried chicken recipes and I've never heard of boiling chicken in milk. I would think the milk is going to just curdle up. Love to know how it turns out. Extremely interested boiler.

I'm with you............I've also never heard of a recipe calling for soaking, then boiling the chicken in milk. I'll report tomorrow evening or Saturday. Hopefully it'll be good, but it could be a bust. We'll see.

This is the strangest recipe for fried chicken I have ever heard of. I also don't understand why you are using frozen gravy when gravy is so easy to make. So, how was the chicken?
