After the soak, you boil the chicken in the milk for about 20 minutes, then remove and and let it cool on a rack.
I'll mix up a simple blend of salt, flour, and cayenne pepper in a gallon freezer bag. Next you put 1-2 pieces of chicken at time into the flour mix and shake, then into an egg mixture, then back into the flour mix, and finally into a cast iron skillet with Crisco at 350 degrees.
In addition to the chicken, I'm going to do some store bought Bob Evans mashed potatoes (with frozen homemade gravy), a salad and vegetables on the side. PJ, chicken thighs and legs are on sale at Marsh right now for $0.99/lb now.
