Ditto, especially the part about soaking for four hours. Huh?

The secret is in the frying...how long on each side, covered/not covered.

My mom just shook the rinsed chicken parts in a bag of flour/salt/pepper. No soaking in anything. Then gently into the frying pan of hot Crisco, cover with lid for...??minutes. Turn pieces once, cover with lid...for ?? minutes. Uncover and fry for a few more minutes. Perfection. Crispy crust, not greasy.

But, like pizza, most fried chicken is good enough no matter what.
The recipe didn't call for frozen gravy, but I had some homemade frozen gravy from a recent meal. It was either that, or powdered gravy for the mashed potatoes.

The chicken was outstanding, but I'm not certain that it wouldn't have been equally excellent had I not soaked it in milk. The chicken was crazy moist, however.................much like broasted chicken.
