I've worked as a concierge in a highrise condo complex for about 2 1/2 years now. I don't find what you're saying to be true in all cases. Instead it just depends on the person's personality.
I do find that those in the hospitality and service industries do treat me better than many of the more affluent folks in the building.
As an aside, I hate getting store specific gift cards. Just because you love the store or restaurant, doesn't mean I will.
I'd rather get cash or an AMEX gift card that is accepted everywhere than a store/restaurant specific one. This Christmas I got a Starbucks card and I've never stepped inside a Starbucks since I don't drink coffee. And yes I know they have other things too.
