Sunday I made Chicken Cacciatore (one of my specialty favorites),
....... which is chicken thighs in a red sauce with halved potatoes, sliced bell peppers, peas, zucchini, green beans and large mushrooms chunks.

........... served in a big bowl with thick slices of fresh baked Italian bread for dunking. Oh Yeah

Forgot about that one.My stepmom is italian and we use to have that quite often, always served with pasta.
This is clarksburg W Va where there's a huge italian population and always great fresh italian products to buy, canned italian style peppers(oliverios),pepporoni rolls and a ton of other stuff. Good eats, always stock up on the 2 above whenever we visit.

PS Oh yea, there is nothing and i mean nothing like real, fresh italian bread. Can't be beat.
My favorite Italian dish was from Cinnaminson NJ. Her name was Marianne.

If I have a bottle open, I'll swish a couple of ounces in the empty tomato cans and add that to the sauce.
I prefer a Blush, Rose or White Zin.

Or as my idiot stepmother pronounces it, See-ah-PEE-no. BTW, for the cacciatore cooks, do you simply put everything in the pan, cover and simmer? I love that dish, but sometimes it tastes like chicken with stewed tomatoes! (I like the thick, ragout type)
Risotto, for the versatility. And because it's just damn good.

Do it in batches. Brown the chicken (and put on a plate), saute the onions and garlic, add peppers and saute, then add the wine and let simmer for a bit, add the tomatoes and capers, and finally the chicken. Let simmer for 45 minutes to an hour. Serve
Thanx chef- I'll try it.
Gnocchi.

Try the King Crab and Black Truffle Gnocchi at Maestro's the next time you are in Las Vegas. I live in Vegas and eat out five times per week and that is my new favorite item in all of Las Vegas.
