Now that they're tearing down the High Roller roller coaster at the top of the Stratosphere Tower, what roller coasters are left from the family-friendly era in Las Vegas?
A:

Actually, other than the High Roller, all but one of the roller coasters built in the '90s in Las Vegas remain. The MGM Grand amusement park opened with an enclosed coaster, but it was pretty tame; not long thereafter the building was removed and it became an outdoor coaster -- though no less lame. When the amusement park bit the dust, so did the roller coaster.

The Canyon Blaster coaster in the Adventuredome at Circus Circus is supposedly the largest indoor roller coaster in the world.

Manhattan Express is the big ride that surrounds New York-New York.

Speed blasts out of the Sahara and runs along the Strip.

And Desperado is a monster of a thrill ride at Buffalo Bill's out at Primm, 40 miles southwest of Las Vegas on 1-15.

You didn't ask, but in case you're interested, southern Nevada remains a pretty family-friendly place. The list of other thrill rides and motion simulators is extensive.

And there are motion simulators at Luxor (currently showing "In Search of the Obelisk," "Reboot," and "In Search of the Haunted Castle"), Excalibur (Merlin's Magic Motion Machine), Las Vegas Hilton ("Star Trek: The Experience"), Sahara (Las Vegas Cyber Speedway), Circus Circus (SpongeBob SquarePants 4-D), and Buffalo Bill's (Max Flight Cyber Coaster and The Vault 3-D Experience).
