Depending on how much detail you require, you might find all you need from one source, namely the Las Vegas Convention and Visitors Authority.
When it comes to visitor information, you want the "Stats & Facts" section of their website, where you can find monthly and year-to-date figures for data including visitor volume, room occupancy rates, convention attendance, and gaming revenue (the latter not quite as detailed or necessarily as up-to-date as the equivalent information available from the GCB, however -- see below).
If you're interested, you can also find all kinds of demographic information in their annual Visitor Profile Studies, including age, gambling habits, average bankroll, non-gaming activities undertaken, and much more.
In terms of gaming revenues, this information is also available in various forms from the Nevada State Gaming Control Board. If you go to their website, look on the left-hand navigation and click on "Publications." The first report listed on the landing page is "Abbreviated Revenue Release," wherein you can find month-by-month reports reflecting total gaming win for Nevada, by region (including separate entries for the Strip, downtown, Boulder Highway, and North Las Vegas), and the comparative data from one year earlier -- basically, the same that you can find at the LVCVA site, but with slighty more detail, including what the state collected in percentage fees.)
If you go back to "Publications," scroll down to the Gaming Revenue Report and you'll find a much more detailed monthly gross revenue breakdown, not just by area, but by game, with the percentage win and and +/- change month-on-month.
Between them, those two sites should answer all of your questions.
