Of course this is a personal choice, but Las Vegas has its screwy creed on tipping that sometimes alters what might seem obvious.
The reality is, even good tippers tend to scale it down at a buffet, and in a case like this, there's a strong case for leaving nothing at all. After all, if you serve yourself and transport your own dirty dishes to a collection spot, you've handled all the functions that you usually tip for. If you leave your dishes on the table, that means someone has to pick them up and you might consider leaving a buck or two. At that point, though, there's a legitimate concern about who will ultimately get the tip. One solution: If you see someone who looks like they're working, hand it to them directly, as you might a good busboy in a regular restaurant. If you don't see a likely candidate, there's nothing wrong with passing on tipping.
As an aside, as part of our monthly buffet update for the LVA newsletter, we called Eastside Cannery and they confirmed that they have got rid of the buffet servers, but there are still bussers who will help you if you need something.
