An inquiry to our good friends at Ellis Island revealed what we thought would be the case, and that they do not supply PT's -- a competitor -- with their famous ribs, although they did inform us that in the past, in "emergency situations" other restaurants have purchased products from them because of the high quality. (Perhaps you happened to be in a PT's during an "emergency situation"!) Our source also explained that they have a very specific cut that they use at EI and don't believe that the Golden Tavern chain uses the same cut. The barbecue sauce they use is also proprietary and not currently available for purchase (we did ask, just in case).
As to your question about quantity, they go through over 5,000 pounds of ribs each month, just in the Ellis Island restaurant.
