I can't find the old article in LVA, but if I remember correctly it talked about a restaurant you could eat at that was actually a training site for future MGM employees. Might not have the casino correctly. In any case, is that restaurant still open and how would one find out about it?
MGM Resorts International’s Callie Driehorst wracked her brain and concluded, “The reader might be thinking of the Culinary Academy. MGM’s name is on the building and we do a lot with them to help develop the culinary and housekeeping workforce citywide. It is not located on property, but it does have a restaurant that is used to train employees.”
Each year, the Culinary Academy of Las Vegas trains several thousand people in 12 job classifications for the local hospitality industry: baker’s helper, bar apprentice, bar porter, bus person, food server, fountain worker, guest room attendant, house person/utility porter, professional cook, sommelier, steward, and wine server.
The training model simulates actual working conditions wherever possible — for example, the Westside Bistro, located at 710 W. Lake Mead Blvd. in North Las Vegas, is a full-service lunch restaurant that also has a buffet (soup, salad, carving station, and desserts baked on site). The Bistro trains servers, bus people, and cooks via a 65-plus-hour program. It's open to the public weekdays 11 a.m. to 2 p.m.
We agree that you're probably thinking about the union Academy. Still, we also asked Las Vegas Review-Journal food critic Al Mancini and came up empty.
In any event, it’s unlikely MGM would directly train employees it hadn’t already hired.
