When I vacation in Las Vegas, I like to go for a week. I've been reading about some hotels that are only open weekends. Can you please provide a comprehensive list of hotel-casinos that are currently closed, open weekends only, open 7 days a week?

Happy to. Though the list is complete, it isn't particularly comprehensive.
Hotel-casinos that are currently completely closed include the Palms, Texas Station, Fiesta Rancho, and Fiesta Henderson, all Station casinos, plus Main Street Station, Eastside Cannery, and Eldorado, all Boyd casinos (and thanks to Shari for bringing up Boyd, which we overlooked).
Palazzo's hotel rooms are currently closed seven days a week, though the suites in Palazzo's sister tower at the Venetian are open full-time.
The Rio finally reopened yesterday, but the hotel rooms are bookable for weekends only.
From now until Monday January 4 at noon, the Mirage's hotel rooms are open weekends only. Starting the Monday after the New Year's weekend, the rest of the property, including the casino and restaurants, will be closed along with the hotel rooms between Monday at noon and Thursday at noon. It's been announced that it will continue through February at least.
The Mirage is taking a page out of Encore's playbook; Encore is entirely closed weekdays -- rooms, casino, the whole kit and caboodle.
The other casinos whose hotel rooms are open weekends only are Park MGM, Mandalay Bay, and Planet Hollywood.
We don't need to list the ones that are open seven days a week; if they're not cited above, they're all open all the time. This might change for or after the holidays. You can find out for sure, if you want to stay in one of them, by calling for reservations or booking online.
