Bobby Flay, of “Iron Chef” fame and proprietor of Mesa Grill at Caesars and Burger Palace at Crystals Mall, opened his first new restaurant in five years at the Palms in spring 2019. (The name was inspired by Damien Hirst’s shark sculpture atop the Unknown Bar in the center of casino.) The space is located at the entrance to the Palms’ nightclub Kaos and has a patio that overlooks the new pool.
Shark serves an extensive seafood menu 65% hot, 35% cold — with sushi, sashimi, ceviches, tartares, and fresh fish using South American, Mexican, and Mediterranean ingredients.
