
Steve Wynn knows a thing or two about buffets. The Golden Nugget was among the earliest fancy buffets decades ago when he took over the joint in his 30s; he followed it with fancy spreads at the Mirage, TI, and Bellagio. He knew exactly what he wanted at the Wynn and he got it -- after some tinkering and a remodel in 2015 to tone down the decor a bit (though the topiaries remain and are a little too ... excessive... for our taste).
This buffet is, by most accounts, the best in Vegas; it was voted the best by the Southern Nevada Hotel Concierge Association. It's certainly one of the biggest, with more than 120 items to choose from. You'll find 15 action stations, including a whole rotisserie wall, a first-of-its-kind-in-North-America (reportedly) parrilla (the grill) serving parrillada (the barbecued meats and such), and a chocolate fountain in which bakers dip an assortment of sweets. Many of the items are served in limited portions, which encourages you to sample more food, though of course you can go back for as much of anything as you like.
A big deal is made out of Frank Sinatra's family recipe for spaghetti and meatballs, but this buffet has some unique specialties, such as short ribs, roast lamb, Peking duck buns and duck leg cassoulet, salmon in a variety of sauces, a surprising choice of ceviche, and street tacos.
The Wynn buffet also caters to those requiring vegetarian/vegan and/or gluten-free diets, plus a large selection of sugar-free desserts for those suffering from diabetes. Ask an employee to show you the vegan selections.

(Lunch)—It’s almost impossible to argue with the wisdom of laying down some coin for Las Vegas’ high-end buffets. So what if lunch at The Buffet at Wynn Las Vegas costs $30.30 after tax? There’s not much of a chance that you’ll leave without getting your money’s worth. The starters alone will do it—two kinds of lox, ahi tuna poke, mussels, a charcuterie selection, sushi cut rolls (limited choice), dim sum, and all sorts of salads, including make-your-own Greek. Entrées run the gamut from fried chicken to Caribbean lamb-stew curry, and the fantastic line-up at the carving station includes chicken, turkey, pork loin, ham, three kinds of sausages, and marinated hanger steak. All the high-enders have an only-at-our-buffet feature, and here it’s a latke bar with made-to-order options that include Reuben, brisket, and smoked fish. The desserts are stacked with a gelato selection, candied apples, cookies, toffee, and our favorites, crème brûlée, berry cheesecake, and the unmatched Wynn bread pudding, this one a butterscotch variation. On the negative side, the sushi is surprisingly pedestrian and there’s no fresh shrimp or crab legs (even snow crab). But overall, quality is high and this list barely scratches the surface for selection. There are also some cool intangibles, beginning with a decent comp play outlined in Gambling. Being that this is a Wynn product, there are lots of vegan choices, which ensures that even non-carnivores can get their $30 worth. And self parking is still free at the Wynn. Lines can get long, but we showed up at noon on a Wednesday and walked right in.
