The one restaurant you always visit and why...?

I enjoy kicking off a Vegas trip with the happy hour at Stratosphere's 107 lounge. Appetizers are 1/2 price, cocktails are 2 for 1 and you can definitely have a reasonable meal from their nice selection of appetizers.

Daily from 4-7 and nightly (appetizers) from 10:30 - 1.

One of the best views in town and NO TOWER ADMISSION for Happy Hour Guests.
Such good suggestions so far...love the steakhouse ones. I like the happy hour suggestion at the strat also!!

My wife and I went for cocktails at the 107 lounge before dinner at Capo's.
We always eat at the Prime Rib Loft at The Orleans.
It is reasonable and Rock'n Rita says it's the best Prime Rib "evah"
Also at The Orleans we dine at Canal Street.
This is a high end place with great food, service and atmosphere.
There is also a wall length Riverboat Mural with special lighting that changes the scene from day to night.

For a unique and different dining experience, try Texas de Brazil.
It's located south of the Strip past Mandalay Bay about a mile or two on the same side (in the Town Square shopping plaza).
It's a place that you should try at least once.

Bouchon for breakfast.
Lawry's Prime Rib just east of the Strip on Flamingo. Excellent food and service.
Fleming's steakhouse
For alunch treat, we always go to Margaritaville for the volcano nachos.

The new breakfast tradition for the family has been Hash house a go-go. (Though I never make it as I usually don't get in from playing poker in time)
Huge portions of comfort food and very good. I'm told its even better fresh in the restaurant instead of several hours old in the hotel room.
Breakfast at the Dupar's coffee shop in Golden Gate. They do a good job with everything we have tried, but the breakfasts are consistently terrific. Really about the best I've had anywhere.

Unfortunately good coffee shops in LV are becoming an endangered species. It's too bad, because I don't want a fancy steakhouse, or Italian, or whatever meal all the time. A solid coffee shop meal is often just what I'm looking for.
